Gruet 'Sauvage' Blanc de Blancs

Perfect for Fish Tacos

Gruet - “Sauvage” Blanc de Blancs - Zéro Dosage NV

Enjoyed on: January 14, 2022

Grapes: 100% Chardonnay

Dosage: 0 g/l

Color: Muted, dusky, yellow. A shadowy white gold.

Nose: Pear, honeydew, and a little lemon zest, but nothing strong. The bouquet is subtle.

Taste: Pear and pear skin, somewhat bitter. Lime juice as well. We’re noticing a pleasant bitterness, tempered by warmth like summer berries (raspberries, etc.). Very light, with a whipped cream-like texture. We also found it saline and zippy, and J paired it with oysters. It would pair well with any seafood and/or Mexican food (we thought longingly of shrimp tacos as we drank it).

This New Mexico-based house never fails to impress us (see also here, here, and here). An excellent value that left us feeling clever for making the purchase.
