Lemon: Variations on a Theme

Grapes: 92% Pinot Noir, 8% Chardonnay

Color: White Christmas Lights. Pale yellow color that struck us as twinkly and festive.

Floral perfumes on the nose. Some kind of delicate bouquet, maybe with baby's breath.

The flavor is dominated by citrus, mostly lemon in various forms: lemon meringue, lemon pastry, lemon peel/zest. Lemon hard candy, or maybe a chewy sugar-dusted soft candy (we couldn't decide on the texture involved).

SOUR. There's a serious puckering feeling far back on the tongue. The bead is also very fine and shudders along your tongue, kind of like a lemon Italian ice. That sour-sweet flavor tricks you into thinking it is drier than it is. Deals a punchy, very sour blow that made us think it might need some more time in the bottle.

But we drink it and want more. In fact, the flavor is so strong it leaves you needing another sip. Like with something perfectly salty and hyperpalatable--could this be the sour-cream-cheddar Ruffles of the champagne world?
