Billecart-Salmon Brut Réserve
Return to outdoor dining, now with more champagne
Enjoyed on: April 13, 2021
Grapes: 30% Chardonnay, 30% Pinot Noir, 40% Meunier
Dosage: 8 g/l
Color: Amber Ale. It was pale and gentle in the glass. Since the bottle we drank was on the older side (we think), the bubbles were few and sedate.
Nose: A bouquet dominated by tulips and roses. Slightly acrid amber notes, too.
Taste: Because the bead was faint, the overall effect was extremely smooth. That’s the first thing we notice before flavors begin to come through: green Jolly Ranchers, flesh of a green apple. Nutty flavors of toasted hazelnut, cinnamon and nutmeg, spiced roast nuts, apples with cinnamon.
Great with the food, an excellent complement to oysters and a crab roll. We also found it cut through the spice of a hot Thai green curry. We would definitely repeat last night’s pairings, or choose this bottle along with other fiery Thai meals and seafood dishes. Varietal-wise, this is well balanced and higher on Meunier than most.
