Texting before their second date, E told J that she had just passed her driving test at the ripe age of 26. J, who had also received his US driving license at 26, understood the significance of the occasion, and knew it called for champagne. J wracked his brain for what he knew about E's tastes. After all, this was only their second date. He knew she liked the driest ciders and gin on the rocks. The champagne would have to be bone-dry. Over a wonderful seafood paella, they enjoyed a bottle of Laurent Perrier Ultra Brut. Zero dosage, no added sugar. It matched the food perfectly. As they left the restaurant, E thanked him for maybe the third time: "That was SO sweet!" J couldn't help replying with a grin, "Actually, it wasn’t at all."
Well, E forgave him for that, and the two went on to explore the world of champagne. They tasted their way through 2020 and learned along the way to understand what they were tasting.
