Grapes: 100% Chardonnay

Color: Trumpet blast. When viewed from above, the color is so shiny and full of light that it almost makes a sound. Subtle bead.

Taste: We can't believe it's a brut nature. Each sip is tart but smooth. Balanced. This champagne is not defined by any one "flavor," something we found perplexing for the first five minutes. Then we surrendered to the experience...and found it totally enjoyable.

Apricot was the first fruit that came to mind--the perfectly light and golden fruit, with that distinctive sour-bitter apricot finish at the back. Or on second thought, cranberry. It calls to mind sugared cranberries that you might see on a gussied up Christmas cake. The experience is serene. The color pale. The bubbles slow. We felt teleported from an ordinary Friday night into a holiday.

As we sipped this with dinner, the light citrus and touch of salinity complemented the seafood we were munching on. It's fresh and zingy, a perfect counterpart for the salty, fishy, and oily things of this world. You take a bite of something with a richer flavor and texture, sip this Laurent-Perrier brut nature, and enjoy the release of those flavors from your tongue.
